2013 Planning

This should be a very fun year! I am sooo stoked about starting my season super early! After running surf city half next month, we are headed to puerto rico in march! whoop whoop!

This past october when planning the race schedule, i thought how awesome it will be to finally make it somewhere different and super warm to race! However, i forgot that training all winter for 3 sports can be challenging! (definitely not as challenging as when i lived in Seattle though)

You see, in the two years Ive lived in SoCal, i've become acclimatized! So now 40* in the morning feels like 20*! BRRRRRRR! However, wait till 11-12 in the morning (it warms up) and you still get a bit of a tan on your SBR workouts. Definitely not sad about that!


In May, we are headed back out to St. George. Yeah, I know what happened to my poor hubbs there....at least they changed the bike course for this race...however, the run is back to a nasty little death march long hill repeat day. I will be logging lots and lots of hills this winter. :( Getting pretty good at them tho.

June is still up in the air. We are hoping for Honu 70.3, but may need some kind of miracle benefactor on that one. ;) Since money doesnt exactly grow on trees around here. haha.

July, headed back to our old stomping grounds for Lake Stevens! Soooo perfect that we have friends getting married in Snohomish, and the next morning I'll be racing away! FUN! *fingers crossed* for decent weather this year, its been long enough that its been crap and wet up there.

More recently, I've been playing with TRIBE-Tri Club of Long Beach, trying to get the Chicks team off the ground. Its going to be a super fun year! Working with Erin, another local rockstar, we will kick this team up a notch!

Happy New Year!

So its 2013, and one of my resolutions this year (amongst other things...) is to post more. At least once a week. I experience so many great things! Whats not worthy of sharing?!
So since I am asked quite a bit about my cooking, I'll most likely be sharing LOTS of food. MMMM, the Steinbuch house always smells good if I do say so myself!
Lately I've been using my rice cooker a TON. Its kind of like cooking with your crock pot but WAY faster. Big thanks to Skratch Labs for this idea, quite a while ago from their bada$$ FeedZone cookbook.
Today was the same... chop veggies and chicken, toss in rice cooker, hit steam cook button, go spin on trainer. House filled with delicious smells. Torture spinning away, watching the Hangover 2, trying to stop my tummy from growling.

This is a low fat take on that cream of chicken casserole yo Momma made.


I chopped up a half an onion, yellow pepper, and about 2.5 cups of mushrooms. Tossed in pot that i had turned on to preheat it.


Next came about 1lb of chicken breast i chopped up, salt and peppered, and tossed in with veggies. I then added 1 can of reduced fat cream of chicken soup, with 1 cup of low sodium chicken broth, and stirred the whole mixture up, so all the lumps were gone!


Closed the lid and away I went! It self times and cooks perfectly.

When we were ready to eat, Kev made some brown ride fusilli noodles to go with his (it will be liquidy, to thicken you can add a bit of cornstarch to the mix about halfway thru cooking time), and I added 1/2 cup of quinoa to my bowl! Yummy veggies and chicken got mad props from the hubbs. I was stoked he didn't notice how many veggies I once again snuck into his dinner! YAY!

It's just too bad we ate it so fast and didn't get any 'after' photos! Next time!
